Best Brewers Yeast
Yeast. Without it there would be no such thing as beer! So what is it and what does it do. The simplest explanation is that they are tiny beastie’s that eat sugar, wee out alcohol and burp out carbon dioxide! Ok, that's probably a bit too simple... Yeast is actually a single-celled micro organism that creates alcohol and carbon dioxide in our beer.
There are hundreds of different varieties of yeasts used to make beer, each with its own set of characteristics and flavours. But broadly speaking most commercial yeasts fall into one of two categories; ale yeast and lager yeast.
Ale yeast rises to the surface of the beer during fermentation; hence it is called a 'top fermenter'. It is much more comfortable living at around 21 C (70 F) and is best know for producing the rich, full bodied, full flavoured ales found in the UK.
